Chinese Noodle Soup

Serves 4-5

200 gms Chinese egg noodles
2 chopped spring onions
1 Ltr chicken stock
2 cups oil for frying
1 tbsp soya sauce
Salt to taste


1. Deep fry the noodles in hot oil and drain well. Put the noodles in the soup bowls.


2. Bring the stock to a boil.

3. Add the chopped onions and cook for 5 minutes.

4. Add the salt, soya sauce to the stock.

5. Pour the stock over the noodles in the bowls till the noodles rise to the top.

6. The soup must be served without any delay if you like your noodles crisp.
