1. Peel the rind thinly from the orange, taking care not to remove any white pith.
Squeeze the juice
from the orange.
2. Place the orangeórind strips and juice in a medium saucepan
with the cranberries. Add the sugar
and 150ml / 1/4 pint / 2/3 cup water to the pan.
3. Bring to the boil, stirring until the
sugar has dissolved, then simmer
for 10-15 minutes, or until the cranberries burst.
4 Remove the orange rind and allow.
