Chick Pea and Avocado Salad

Serves 6
 
Ingredients
3 cups cooked chick peas
1 cup cooked green peas
1 red capsicum, seeded and diced
1 avocado, peeled, seeded and diced selection of lettuce leaves
Dressing

1 tbsp extra virgin olive oil
2 tbsps wine vinegar
1 tsp Dijon mustard
1 tbsp chopped fresh tarragon
 
 
   
 
Method:

1.   Combine chick peas, green peas and capsicum.

2. Mix all dressing ingredients together and pour over peas. Let stand for 15 minutes.

3. Add avocado and serve with selection of lettuces.

Nutritional information per serve: Protein 10 g; fat 14 g; carbohydrate 21 g; excellent dietary fiber 8 g; 1010 kJ (240 Cals).

Other features: Excellent source of vitamin C, good source of iron, potassium, thiamin, niacin. Low sodium (15 mg).
