Szechuan Noodles

Serves : 4-5
Cooking Time: 35min
250 gms home-made noodles
3 tbsp chicken stock
1 tbsp cornflour
1 tbsp soya sauce
1 tbsp tomato sauce
tsp chilli sauce
1 tsp vinegar
2 tbsp peanut oil
60 gms minced mutton - cooked
1/2 tsp fresh ginger
1 slice chopped chicken breast
100 gms peeled chopped prawns
salt and pepper to taste

1.  Heat the oil and fry the mutton, prawns and chicken for 3-4 minutes.

2. Then add the ginger, vinegar, the 3 sauces, cornflour, stock, salt and pepper.

3. Cook for 10 minutes, stirring all the time. Keep aside.

4. Cook the noodles in salted boiling water until tender. Drain.

5. Transfer the noodles to a dish and pour the mixture over the noodles. Serve.
