4. Heat the salad oil and pour in the eggs. When set, break up into small pieces. Heat the peanut oil and sesame oil.
5. Add the peas, corn, mushrooms, and stir over medium heat.
6. Add cucumber and raisins and stir for 1 minute.
7. Pour in the chicken stock.
8. When contents are boiling add the rice.
9. Add the eggs and lettuce and stir well into the rice.
10. Add the soya sauce, salt and sugar.
11. Stir lightly. Serve hot or cold.
