Method:
1. Mix the mayonnaise thoroughly with the Swiss
cheese, using enough mayonnaise to make it spreadable.
Put in a bowl just large enough to hold it, cover with plastic wrap and
refrigerate. When ready to serve, turn out onto a platter and mold into a
mound using your hands.
2. Sprinkle with the parsley and place crackers
around mold.
